Ingredients

  • Fresh basil - 1/4 cup, chopped
  • Mozzarella cheese - 1 cup, shredded
  • Tomato sauce - 2 cups

  • Breadcrumbs - 1 cup
  • Eggs - 2
  • Chicken breasts - 4 boneless, skinless

Instructions

  1. Preheat the oven to 375°F.
  2. In a shallow dish, beat the eggs with salt and pepper.
  3. In another shallow dish, combine the breadcrumbs and grated Parmesan cheese.
  4. Dip each chicken breast into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Add the breaded chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side.
  7. Transfer the chicken breasts to a baking dish.
  8. Pour the tomato sauce over the chicken breasts.
  9. Sprinkle the shredded mozzarella cheese over the tomato sauce.
  10. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  11. Garnish with chopped fresh basil before serving.
