The Po' Boy sandwich is a classic Louisiana dish made with crispy fried seafood or roast beef, served on a French bread roll with lettuce, tomato, pickles, and a tangy remoulade sauce.

Ingredients

  • Remoulade sauce - 1/2 cup
  • Pickles - 4 slices
  • Tomato - 1, sliced
  • Lettuce - 4 leaves
  • French bread rolls - 2, split lengthwise
  • Vegetable oil - 1/2 cup, for frying
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Cajun seasoning - 1 tablespoon
  • All - purpose flour - 1/2 cup
  • Cornmeal - 1/2 cup
  • Shrimp or roast beef - 1/2 pound, peeled and deveined (for shrimp) or thinly sliced (for roast beef)

Instructions

  1. In a shallow dish, combine the cornmeal, flour, Cajun seasoning, salt, and black pepper.
  2. Dredge the shrimp or roast beef slices in the cornmeal mixture, pressing lightly to adhere.
  3. In a large skillet, heat the vegetable oil over medium-high heat.
  4. Fry the shrimp or roast beef until golden brown and crispy, about 2-3 minutes per side.
  5. Remove from the skillet and drain on paper towels.
  6. Spread the remoulade sauce on the cut sides of the French bread rolls.
  7. Layer the lettuce, tomato slices, pickles, and fried shrimp or roast beef on the bottom halves of the rolls.
  8. Cover with the top halves of the rolls and serve immediately.
