Po Boys

This classic New Orleans sandwich features crispy fried shrimp served on a soft baguette with lettuce, tomato, and a tangy remoulade sauce.

Ingredients

  • Remoulade sauce - 1/2 cup
  • Tomato - 1, sliced
  • Lettuce - 4 leaves
  • Baguette - 4, split lengthwise
  • Vegetable oil - For frying
  • Salt - 1 teaspoon
  • Cajun seasoning - 1 tablespoon
  • All - purpose flour - 1/2 cup
  • Cornmeal - 1 cup
  • Buttermilk - 1 cup
  • Shrimp - 1 pound, peeled and deveined

Instructions

  1. In a bowl, combine the shrimp and buttermilk. Let it marinate for 10 minutes.
  2. In a separate bowl, mix together the cornmeal, flour, Cajun seasoning, and salt.
  3. Heat vegetable oil in a deep skillet or fryer to 350°F.
  4. Remove the shrimp from the buttermilk, allowing any excess to drip off.
  5. Dredge the shrimp in the cornmeal mixture, pressing gently to adhere.
  6. Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes per batch.
  7. Transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
  8. Spread remoulade sauce on the cut sides of the baguette.
  9. Layer lettuce, tomato slices, and fried shrimp on the bottom half of the baguette.
  10. Close the sandwich with the top half of the baguette.
  11. Serve the shrimp po' boys immediately and enjoy!
