Pinto Bean and Shrimp Tacos

These delicious tacos are filled with seasoned pinto beans and succulent shrimp, topped with fresh salsa and creamy avocado.

Ingredients

  • Salt and pepper - To taste
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Avocado - 1, sliced
  • Salsa - 1 cup
  • Corn tortillas - 8
  • Olive oil - 2 tablespoons
  • Taco seasoning - 2 tablespoons
  • Shrimp - 1 pound, peeled and deveined
  • Pinto beans - 1 can, drained and rinsed

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add the shrimp and taco seasoning. Cook until the shrimp are pink and cooked through, about 3-4 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the pinto beans and cook until heated through, about 2-3 minutes. Season with salt and pepper to taste.
  4. Warm the corn tortillas in a separate skillet or in the oven.
  5. To assemble the tacos, spread a spoonful of pinto beans on each tortilla.
  6. Top with shrimp, salsa, avocado slices, and chopped cilantro.
  7. Serve with lime wedges on the side.
