This hearty and flavorful pinto bean and sausage casserole is a perfect comfort food dish.
Ingredients
Green onions - 2, sliced (for garnish)
Shredded cheddar cheese - 1 cup
Salt and pepper - To taste
Cumin - 1 teaspoon
Chili powder - 1 tablespoon
Tomato sauce - 1 can (8 oz)
Diced tomatoes - 1 can (14.5 oz)
Bell pepper - 1, chopped
Garlic - 3 cloves, minced
Onion - 1 medium, chopped
Italian sausage - 1 lb, casings removed
Pinto beans - 2 cans (15 oz each), drained and rinsed
Instructions
Preheat the oven to 375°F.
In a large skillet, cook the Italian sausage over medium heat until browned. Remove from the skillet and set aside.
In the same skillet, sauté the onion, garlic, and bell pepper until softened.
Add the cooked sausage back to the skillet, along with the pinto beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and pepper. Stir well to combine.
Transfer the mixture to a casserole dish and sprinkle with shredded cheddar cheese.
Bake for 30-35 minutes, or until the cheese is melted and bubbly.
