Pineapple Bread Pudding

This delicious pineapple bread pudding is a tropical twist on a classic dessert.

Ingredients

  • Chopped pecans - 1/2 cup
  • Brown sugar - 1/2 cup
  • Butter - 4 tablespoons, melted
  • Cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Granulated sugar - 1 cup
  • Milk - 2 cups
  • Eggs - 4
  • Canned pineapple chunks - 1 can (20 oz), drained
  • Bread - 8 cups, cubed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, combine the bread cubes and drained pineapple chunks.
  3. In a separate bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and cinnamon.
  4. Pour the egg mixture over the bread and pineapple mixture. Stir well to combine and let it sit for 10 minutes to allow the bread to absorb the liquid.
  5. Pour the melted butter over the top of the bread pudding.
  6. In a small bowl, mix together the brown sugar and chopped pecans. Sprinkle this mixture evenly over the bread pudding.
  7. Bake for 40-45 minutes, or until the bread pudding is set and golden brown on top.
  8. Remove from the oven and let it cool for a few minutes before serving.
  9. Serve warm and enjoy!
