Pike Place Chowder

A hearty and comforting seafood chowder, inspired by the famous Pike Place Market in Seattle.

Ingredients

  • Mixed seafood - 1 pound
  • Salt and pepper - To taste
  • Fresh thyme - 1 teaspoon
  • Heavy cream - 1 cup
  • Potatoes - 2 large, diced
  • Clam juice - 2 cups
  • Flour - 1/3 cup
  • Garlic - 2 cloves, minced
  • Celery - 2 stalks, chopped
  • Onions - 1 large, chopped
  • Butter - 2 tablespoons

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the onions, celery, and garlic and cook until the vegetables are soft, about 5 minutes.
  3. Stir in the flour to make a roux, then slowly whisk in the clam juice until smooth.
  4. Add the potatoes, heavy cream, thyme, salt, and pepper. Bring to a simmer and cook until the potatoes are tender, about 20 minutes.
  5. Add the mixed seafood and cook until heated through, about 5 minutes.
  6. Serve the chowder hot, with crusty bread on the side.
