This delicious peanut chicken stir fry is packed with flavor and is quick and easy to make.
Ingredients
Cooked rice - 4 cups, for serving
Peanuts - 1/4 cup, chopped
Green onions - 4, sliced
Carrots - 2, julienned
Broccoli florets - 2 cups
Bell peppers - 2, thinly sliced
Vegetable oil - 2 tablespoons
Ginger - 1 tablespoon, grated
Garlic - 3 cloves, minced
Honey - 1 tablespoon
Peanut butter - 2 tablespoons
Soy sauce - 3 tablespoons
Chicken breast - 2, boneless and skinless, cut into thin strips
Instructions
In a small bowl, whisk together soy sauce, peanut butter, honey, minced garlic, and grated ginger. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add chicken strips and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
In the same skillet, add bell peppers, broccoli florets, carrots, and sliced green onions. Stir fry for 3-4 minutes, until vegetables are crisp-tender.
Return the cooked chicken to the skillet and pour the peanut sauce over the chicken and vegetables. Stir well to coat everything evenly.
Cook for an additional 2-3 minutes, until the sauce is heated through and thickened slightly.
Sprinkle chopped peanuts over the stir fry and stir to combine.
