Pea and Egg Fried Rice

This delicious pea and egg fried rice is a quick and easy dish that is perfect for a weeknight dinner.

Ingredients

  • Salt and pepper - To taste
  • Green onions - 4, chopped
  • Garlic - 2 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Eggs - 3
  • Frozen peas - 1 cup
  • Cooked rice - 4 cups

Instructions

  1. In a small bowl, beat the eggs with a pinch of salt and pepper.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  3. Add the beaten eggs to the skillet and scramble until cooked through. Remove from the skillet and set aside.
  4. In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium-high heat.
  5. Add the minced garlic and chopped green onions to the skillet and sauté for 1-2 minutes.
  6. Add the frozen peas to the skillet and cook for another 2-3 minutes, until heated through.
  7. Add the cooked rice to the skillet and stir-fry for 3-4 minutes, breaking up any clumps.
  8. Drizzle the soy sauce and sesame oil over the rice and stir to combine.
  9. Add the scrambled eggs back to the skillet and toss everything together until well mixed.
  10. Season with salt and pepper to taste.
  11. Serve hot and enjoy!
