Parsnip and Carrot Latkes

These crispy parsnip and carrot latkes are a delicious twist on traditional potato latkes. They are perfect for breakfast, brunch, or as a side dish.

Ingredients

  • Chives - 2 tablespoons, chopped (for garnish)
  • Sour cream - 1/2 cup (for serving)
  • Vegetable oil - 1/4 cup
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • All - purpose flour - 2 tablespoons
  • Eggs - 2 large
  • Onion - 1 small, grated
  • Carrots - 2 medium, peeled and grated
  • Parsnips - 2 medium, peeled and grated

Instructions

  1. In a large bowl, combine the grated parsnips, carrots, and onion.
  2. Add the eggs, flour, salt, and black pepper to the bowl. Mix well until all ingredients are combined.
  3. Heat the vegetable oil in a large skillet over medium heat.
  4. Scoop about 1/4 cup of the latke mixture and flatten it into a pancake shape. Place it in the skillet and repeat with the remaining mixture, leaving some space between each latke.
  5. Cook the latkes for about 3-4 minutes on each side, or until they are golden brown and crispy.
  6. Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Serve the parsnip and carrot latkes hot, topped with a dollop of sour cream and a sprinkle of chopped chives.
