Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 2 tablespoons
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed greens - 4 cups
  • Parmesan cheese - 1/2 cup, grated
  • Goat cheese - 4 oz

Instructions

  1. Preheat the oven to 400°F.
  2. Slice the goat cheese into 1/2-inch thick rounds.
  3. Coat each goat cheese round with grated parmesan cheese, pressing gently to adhere.
