Paila Marina

Paila Marina is a traditional Chilean seafood stew that's quick to make and full of flavor. It's perfect for cold winter nights or any time you're in the mood for a hearty, warming meal.

Ingredients

  • Salt and pepper - To taste
  • Parsley - 1 bunch, chopped
  • Mixed seafood - 1 kg
  • Fish stock - 4 cups
  • White wine - 1 cup
  • Tomatoes - 2, chopped
  • Red bell pepper - 1, chopped
  • Garlic - 3 cloves, minced
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
  3. Add the tomatoes and cook for another 5 minutes.
  4. Pour in the white wine and let it simmer until it reduces by half.
  5. Add the fish stock and bring to a boil.
  6. Add the mixed seafood, reduce the heat to low, and simmer for 20 minutes.
  7. Season with salt and pepper to taste.
  8. Stir in the chopped parsley just before serving.
