Pacific Cod Ceviche

This refreshing Pacific Cod Ceviche is perfect for a light meal or appetizer. The cod is marinated in citrus juices and mixed with fresh vegetables for a delicious and healthy dish.

Ingredients

  • Tortilla chips - For serving
  • Salt - To taste
  • Tomato - 1, diced
  • Jalapeno - 1, seeded and finely chopped
  • Cilantro - 1/2 cup, chopped
  • Red onion - 1, finely chopped
  • Orange juice - 1/2 cup
  • Lemon juice - 1/2 cup
  • Lime juice - 1/2 cup
  • Pacific cod - 1 pound, cut into 1/2 inch pieces

Instructions

  1. In a large bowl, combine the cod, lime juice, lemon juice, and orange juice. Make sure the fish is completely covered in the juice. Cover and refrigerate for 4 hours, or until the fish is opaque.
  2. Drain the fish, reserving a small amount of the citrus juice.
  3. Add the red onion, cilantro, jalapeno, and tomato to the fish. Stir to combine.
  4. Season with salt to taste. If desired, add a bit of the reserved citrus juice for extra flavor.
  5. Serve the ceviche with tortilla chips.
