Ingredients
Olive oil - 2 tablespoons
Parmesan cheese - 1/4 cup, grated
Mozzarella cheese - 1 cup, shredded
Black pepper - 1/4 teaspoon
Salt - 1/2 teaspoon
Garlic powder - 1 teaspoon
Oregano - 2 teaspoons, dried
Chicken breasts - 4 boneless, skinless
Instructions
Preheat the oven to 375°F.
In a small bowl, mix together the oregano, garlic powder, salt, and black pepper.
Using a sharp knife, make a pocket in each chicken breast by cutting horizontally through the thickest part of the breast, being careful not to cut all the way through.
Season the inside of each chicken breast with the oregano mixture.
Stuff each chicken breast with the shredded mozzarella and grated Parmesan cheese.
Heat the olive oil in a large skillet over medium-high heat.
Add the stuffed chicken breasts to the skillet and cook for 2-3 minutes on each side, until browned.
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Serve the oregano and cheese stuffed chicken hot, garnished with fresh oregano leaves if desired.
