Orange and Cardamom Muffins

These delicious orange and cardamom muffins are bursting with citrus flavor and a hint of aromatic cardamom.

Ingredients

  • Powdered sugar - For dusting
  • Vanilla extract - 1 teaspoon
  • Milk - 1/2 cup
  • Freshly squeezed orange juice - 1/2 cup
  • Orange zest - 2 tablespoons
  • Eggs - 2
  • Granulated sugar - 3/4 cup
  • Unsalted butter - 1/2 cup, melted
  • Cardamom - 1 teaspoon, ground
  • Salt - 1/4 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and ground cardamom.
  3. In a separate bowl, mix together the melted butter and granulated sugar until well combined.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the orange zest, orange juice, milk, and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
  10. Once cooled, dust the muffins with powdered sugar before serving.
