Noodle Stir Fry

This delicious noodle stir fry is packed with vegetables and tossed in a flavorful sauce.

Ingredients

  • Green onions - 2, sliced, for garnish
  • Sesame seeds - 1 tablespoon, for garnish
  • Honey - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Soy sauce - 3 tablespoons
  • Broccoli florets - 2 cups
  • Carrots - 2, julienned
  • Bell peppers - 2, thinly sliced
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Noodles - 8 ounces

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add minced garlic and grated ginger to the pan and sauté for 1 minute.
  4. Add bell peppers, carrots, and broccoli to the pan. Stir fry for 3-4 minutes, until the vegetables are crisp-tender.
  5. In a small bowl, whisk together soy sauce, sesame oil, and honey to make the sauce.
  6. Add the cooked noodles to the pan and pour the sauce over them. Toss everything together to coat the noodles and vegetables in the sauce.
  7. Cook for an additional 2-3 minutes, until everything is heated through.
  8. Garnish with sesame seeds and sliced green onions before serving.
