Nabe Yaki Udon

Nabe Yaki Udon is a delicious Japanese noodle dish cooked in a hot pot with various ingredients.

Ingredients

  • Sesame oil - 1 tablespoon
  • Egg - 2
  • Salt - To taste
  • Mirin - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Dashi broth - 4 cups
  • Fish cake - 2 slices, thinly sliced
  • Spinach - 1 cup
  • Green onions - 2, chopped
  • Carrot - 1, julienned
  • Mushrooms - 100g, sliced
  • Shrimp - 150g, peeled and deveined
  • Chicken breast - 200g, thinly sliced
  • Udon noodles - 200g

Instructions

  1. In a large pot, bring water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
  2. In a separate pot, heat the dashi broth over medium heat. Add soy sauce, mirin, and salt to taste.
  3. Add the chicken, shrimp, mushrooms, carrot, green onions, spinach, and fish cake to the pot. Cook until the chicken is cooked through and the vegetables are tender.
  4. Divide the cooked udon noodles into two bowls.
  5. Crack an egg into each bowl of noodles and gently mix.
  6. Pour the hot broth and ingredients over the noodles and eggs.
  7. Drizzle with sesame oil and garnish with additional green onions.
  8. Serve hot and enjoy!
