Mushroom and Cheese Quesadilla

These delicious mushroom and cheese quesadillas are filled with sautéed mushrooms, melted cheese, and a hint of spices.

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Paprika - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Cheddar cheese - 1 cup, shredded
  • Tortillas - 4 medium-sized
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1/2 medium, thinly sliced
  • Mushrooms - 8 ounces, sliced

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the sliced mushrooms, onion, and minced garlic. Sauté until the mushrooms are golden brown and the onions are translucent, about 5-7 minutes.
  3. Season with cumin, paprika, salt, and pepper. Stir well to coat the mushrooms and onions with the spices.
  4. Remove the mushroom mixture from the skillet and set aside.
  5. Place a tortilla in the skillet and sprinkle half of the shredded cheddar cheese on one side of the tortilla.
  6. Spread half of the mushroom mixture evenly over the cheese.
  7. Fold the tortilla in half to cover the filling.
  8. Cook for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted.
  9. Repeat the process with the remaining tortillas, cheese, and mushroom mixture.
  10. Serve the quesadillas hot, garnished with fresh cilantro.
  11. Cut into wedges and enjoy!
