Mocha Pancakes

These delicious mocha pancakes are perfect for breakfast or brunch. They are infused with the rich flavors of coffee and chocolate.

Ingredients

  • Maple syrup - For serving
  • Chocolate chips - 1/2 cup
  • Vanilla extract - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Egg - 1
  • Milk - 1 cup
  • Instant coffee powder - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Baking powder - 2 teaspoons
  • Granulated sugar - 2 tablespoons
  • Cocoa powder - 2 tablespoons
  • All - purpose flour - 1 1/2 cups

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, salt, and instant coffee powder.
  2. In a separate bowl, whisk together the milk, egg, vegetable oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Fold in the chocolate chips.
  5. Heat a non-stick skillet or griddle over medium heat. Grease with cooking spray or a small amount of vegetable oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until cooked through.
  7. Repeat with the remaining batter.
  8. Serve the mocha pancakes warm with maple syrup.
