Red Velvet Pancakes

These fluffy and decadent red velvet pancakes are perfect for a special breakfast or brunch.

Ingredients

  • Vanilla extract - 1/2 teaspoon
  • Milk - 2 tablespoons
  • Powdered sugar - 1/2 cup
  • Cream cheese - 4 ounces, softened
  • Vegetable oil - 2 tablespoons
  • Unsalted butter - 2 tablespoons, melted
  • Vanilla extract - 1 teaspoon
  • Red food coloring - 2 tablespoons
  • Eggs - 2
  • Buttermilk - 1 1/2 cups
  • Granulated sugar - 1/4 cup
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • Cocoa powder - 2 tablespoons
  • All - purpose flour - 2 cups

Instructions

  1. In a large bowl, whisk together the flour, cocoa powder, baking powder, salt, and granulated sugar.
  2. In a separate bowl, whisk together the buttermilk, eggs, red food coloring, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  4. Heat a griddle or non-stick skillet over medium heat and brush with vegetable oil.
  5. Pour 1/4 cup of batter onto the griddle for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until cooked through.
  7. In a small bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
  8. Serve the pancakes with a dollop of cream cheese frosting on top.
  9. Optional: Garnish with fresh berries or chocolate shavings.
