Minestrone Alla Fiorentina

A hearty Italian vegetable soup with white beans and pasta, perfect for a cold day.

Ingredients

  • Parmesan cheese - For serving
  • Salt and pepper - To taste
  • Spinach - 2 cups, chopped
  • Small pasta - 1 cup
  • Chicken or vegetable broth - 6 cups
  • Cannellini beans - 1 can (15 oz), drained and rinsed
  • Canned diced tomatoes - 1 can (14.5 oz)
  • Garlic - 2 cloves, minced
  • Celery - 2 stalks, chopped
  • Carrots - 2, chopped
  • Onion - 1 large, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
  3. Add the diced tomatoes, beans, and broth and bring to a boil.
  4. Reduce the heat and simmer for 20 minutes.
  5. Add the pasta and cook until tender, about 10 minutes.
  6. Stir in the spinach and cook until wilted, about 2 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese.
