Minestrone Di Farro

A hearty and healthy Italian soup made with farro, vegetables, and beans.

Ingredients

  • Parmesan cheese - For serving
  • Salt and pepper - To taste
  • Kale - 2 cups, chopped
  • Vegetable broth - 6 cups
  • Cannellini beans - 1 can, drained and rinsed
  • Canned diced tomatoes - 1 can
  • Farro - 1 cup
  • Garlic - 2 cloves, minced
  • Celery - 2 stalks, chopped
  • Carrots - 2, chopped
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
  3. Add the farro, tomatoes, beans, and broth and bring to a boil.
  4. Reduce the heat and simmer for 30 minutes, or until the farro is tender.
  5. Add the kale and cook for another 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the soup hot, topped with grated Parmesan cheese.
