Ingredients

  • Cooked quinoa - 1 cup
  • Fresh parsley - 2 tablespoons, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Tomato - 1/2 cup, diced
  • Cucumber - 1/2 cup, diced
  • Lemon juice - 1 tablespoon
  • Greek yogurt - 1/2 cup
  • Salt and pepper - To taste
  • Ground paprika - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Ground lamb - 1 pound

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and chopped onion, and sauté until fragrant and translucent.
  3. Add ground lamb to the skillet and cook until browned and cooked through.
  4. Season the lamb with ground cumin, ground coriander, ground paprika, salt, and pepper. Stir well to coat the meat with the spices.
  5. In a small bowl, mix Greek yogurt with lemon juice to make a sauce.
  6. In a serving bowl, layer cooked quinoa, seasoned lamb, diced cucumber, diced tomato, sliced red onion, and chopped fresh parsley.
  7. Drizzle the Greek yogurt sauce over the gyro bowl.
