Maultaschen

Maultaschen are traditional German dumplings filled with a flavorful mixture of meat, spinach, and spices.

Ingredients

  • Parsley - 2 tablespoons, chopped (for garnish)
  • Vegetable broth - 4 cups
  • Water - 1/4 cup
  • Eggs - 2
  • All - purpose flour - 2 cups
  • Salt and pepper - To taste
  • Nutmeg - 1/2 teaspoon
  • Milk - 1/4 cup
  • Egg - 1
  • Bread crumbs - 1/2 cup
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Spinach - 1 cup, cooked and chopped
  • Ground beef - 1 pound

Instructions

  1. In a large bowl, combine the ground beef, cooked spinach, chopped onion, minced garlic, bread crumbs, egg, milk, nutmeg, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. On a clean surface, sprinkle some flour and roll out the dough to a thickness of about 1/8 inch.
  3. Cut the rolled-out dough into squares of about 3x3 inches.
  4. Place a spoonful of the meat mixture in the center of each dough square.
  5. Fold the dough over the filling to form a triangle and press the edges firmly to seal.
  6. In a large pot, bring water to a boil. Add salt to the boiling water.
  7. Carefully drop the maultaschen into the boiling water and cook for about 10-12 minutes, or until they float to the surface.
  8. In a separate pot, heat the vegetable broth.
  9. Using a slotted spoon, transfer the cooked maultaschen from the boiling water to the heated vegetable broth.
  10. Simmer the maultaschen in the vegetable broth for about 5 minutes.
  11. Serve the maultaschen in bowls, garnished with chopped parsley.
