Matoke

Matoke is a traditional East African dish made from green bananas. It is often served as a main course and is commonly eaten in countries like Uganda, Rwanda, and Tanzania.

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped
  • Water - 2 cups
  • Salt - To taste
  • Turmeric powder - 1/2 teaspoon
  • Curry powder - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Ginger - 1 teaspoon, grated
  • Garlic - 3 cloves, minced
  • Tomatoes - 2, chopped
  • Onion - 1, chopped
  • Green bananas - 6

Instructions

  1. Peel the green bananas and cut them into chunks.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  4. Add the chopped tomatoes, curry powder, turmeric powder, and salt. Cook for 5 minutes, stirring occasionally.
  5. Add the banana chunks to the pot and stir to coat them with the tomato mixture.
  6. Pour in the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the bananas are tender.
  7. Remove from heat and garnish with chopped cilantro.
  8. Serve hot as a main course.
