Mango Sticky Rice Pudding

A delicious Thai dessert made with sticky rice, fresh mango, and coconut milk.

Ingredients

  • Coconut flakes - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Mango - 2 ripe, sliced
  • Salt - 1/4 teaspoon
  • Sugar - 1/4 cup
  • Coconut milk - 1 cup
  • Sticky rice - 1 cup

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear.
  2. Soak the rice in water for at least 4 hours or overnight.
  3. Drain the rice and place it in a steamer basket lined with cheesecloth.
  4. Steam the rice over high heat for 20-25 minutes, or until it is tender and cooked through.
  5. In a saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar is dissolved.
  6. Remove the cooked rice from the steamer and transfer it to a bowl.
  7. Pour the coconut milk mixture over the rice and stir gently to combine.
  8. Let the rice sit for 10-15 minutes to absorb the coconut milk.
  9. To serve, place a scoop of the sticky rice on a plate and top with sliced mango.
  10. Sprinkle with sesame seeds and coconut flakes.
