A delicious Thai dessert made with sticky rice, fresh mango, and coconut sauce.
Ingredients
Fresh mint leaves - For garnish
Sesame seeds - 1 tablespoon
Ripe mangoes - 2, sliced
Salt - 1/4 teaspoon
Sugar - 1/4 cup
Coconut milk - 1 cup
Sticky rice - 1 cup
Instructions
Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice over high heat for 20 minutes, or until it is tender and cooked through.
While the rice is steaming, prepare the coconut sauce. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is dissolved and the mixture is heated through. Remove from heat and set aside.
Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Mix well to coat the rice with the sauce.
To serve, place a portion of the sticky rice on a plate. Arrange the sliced mangoes on top of the rice. Drizzle with more coconut sauce and sprinkle with sesame seeds.
Garnish with fresh mint leaves and serve warm or at room temperature.
