Mango and Goat Cheese Bruschetta

This refreshing bruschetta combines the sweetness of mango with the creaminess of goat cheese for a delightful appetizer.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Extra virgin olive oil - 2 tbsp
  • Balsamic glaze - 2 tbsp
  • Fresh basil leaves - 1/4 cup, chopped
  • Ripe mango - 1, diced
  • Goat cheese - 4 oz
  • French baguette - 1

Instructions

  1. Preheat the oven to 375°F.
  2. Slice the baguette into 1/2-inch thick slices.
  3. Brush both sides of the bread slices with olive oil and place them on a baking sheet.
  4. Bake for 5 minutes, or until the bread is toasted and golden brown.
  5. In a bowl, combine the diced mango, chopped basil, salt, and black pepper.
  6. Spread a layer of goat cheese on each toasted bread slice.
  7. Top the goat cheese with the mango and basil mixture.
  8. Drizzle balsamic glaze over the bruschetta.
