Kuku Sabzi

Kuku Sabzi is a traditional Persian herb frittata packed with fresh herbs and spices.

Ingredients

  • Vegetable oil - 2 tablespoons
  • Salt and pepper - To taste
  • Turmeric - 1/2 teaspoon
  • Baking powder - 1 teaspoon
  • Spinach - 1 cup, chopped
  • Fresh fenugreek leaves - 1/2 cup, chopped
  • Fresh chives - 1/2 cup, chopped
  • Fresh dill - 1 cup, chopped
  • Fresh cilantro - 1 cup, chopped
  • Fresh parsley - 1 cup, chopped
  • Eggs - 6

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, beat the eggs.
  3. Add the chopped herbs, spinach, baking powder, turmeric, salt, and pepper to the eggs. Mix well.
  4. Heat the vegetable oil in an oven-safe skillet over medium heat.
  5. Pour the egg mixture into the skillet and spread it evenly.
  6. Cook for 5 minutes, or until the edges start to set.
  7. Transfer the skillet to the preheated oven and bake for 30 minutes, or until the top is golden brown and the center is set.
  8. Remove from the oven and let it cool for a few minutes.
  9. Slice and serve the Kuku Sabzi warm or at room temperature.
