Kleinur are traditional Icelandic deep-fried pastries, often enjoyed with a cup of coffee.
Ingredients
Powdered sugar - For dusting
Vegetable oil - For frying
Vanilla extract - 1 teaspoon
Milk - 1/2 cup
Egg - 1
Butter - 2 tablespoons, melted
Salt - 1/4 teaspoon
Baking powder - 1 teaspoon
Granulated sugar - 1/4 cup
All - purpose flour - 2 cups
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Add the melted butter, egg, milk, and vanilla extract to the dry ingredients. Mix until well combined.
Knead the dough on a lightly floured surface until smooth and elastic, about 5 minutes.
Cover the dough with a clean kitchen towel and let it rest for 10 minutes.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Roll out the dough to a thickness of about 1/4 inch.
Cut the dough into strips, about 4 inches long and 1 inch wide. Make a small slit in the middle of each strip and pull one end through to create a twisted shape.
Fry the kleinur in batches until golden brown, about 2-3 minutes per side.
Remove the kleinur from the oil and drain on paper towels.
Dust the kleinur with powdered sugar before serving.
