Keto Cauliflower Rice Pilaf

This keto-friendly cauliflower rice pilaf is a delicious and healthy alternative to traditional rice pilaf.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Cumin - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Frozen peas - 1/2 cup
  • Bell pepper - 1 small, diced
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Cauliflower - 1 medium head, grated

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the grated cauliflower and bell pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Stir in the frozen peas, turmeric, cumin, salt, and pepper. Cook for an additional 2 minutes.
  5. Remove from heat and sprinkle with fresh parsley before serving.
