Italian Omelette with Tomato and Mozzarella

This Italian-style omelette is filled with fresh tomatoes and creamy mozzarella cheese.

Ingredients

  • Olive oil - 1 tablespoon
  • Salt and pepper - To taste
  • Fresh basil - 2 tablespoons, chopped
  • Mozzarella cheese - 1/2 cup, shredded
  • Tomato - 1, diced
  • Eggs - 4

Instructions

  1. In a bowl, beat the eggs with salt and pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and cook for 2-3 minutes, until the edges start to set.
  4. Sprinkle the diced tomatoes, shredded mozzarella, and chopped basil evenly over one half of the omelette.
  5. Fold the other half of the omelette over the filling and cook for another 2-3 minutes, until the cheese is melted and the omelette is cooked through.
  6. Slide the omelette onto a plate and cut into wedges.
  7. Serve hot and enjoy!
