Italian Meatballs in Tomato Sauce

Ingredients

  • Basil - 1/4 cup, chopped
  • Canned tomatoes - 28 ounces
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Parsley - 1/4 cup, chopped
  • Eggs - 2
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 1/2 cup, grated
  • Breadcrumbs - 1 cup
  • Ground pork - 1/2 pound
  • Ground beef - 1 pound

Instructions

  1. In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan, garlic, eggs, parsley, salt, and pepper. Mix until well combined.
  2. Form the mixture into 1-inch meatballs and set aside.
  3. Heat the olive oil in a large pot over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes. Remove the meatballs from the pot and set aside.
  4. In the same pot, add the onion and cook until softened, about 5 minutes.
  5. Add the canned tomatoes and basil to the pot. Bring to a simmer.
  6. Return the meatballs to the pot and simmer in the sauce for 30 minutes, or until the meatballs are cooked through.
  7. Serve the meatballs and sauce over cooked pasta or with crusty bread.
