Indian Aloo Gobi

Aloo Gobi is a classic Indian dish made with potatoes, cauliflower, and a blend of aromatic spices.

Ingredients

  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - To taste
  • Garam masala - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Green chili - 1, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Cauliflower - 1 small head, cut into florets
  • Potatoes - 2 medium, peeled and diced

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Add minced garlic, grated ginger, and green chili. Sauté for another minute.
  4. Add turmeric powder, cumin powder, coriander powder, and garam masala. Mix well.
  5. Add diced potatoes and cauliflower florets. Stir to coat them with the spices.
  6. Cover the pan and cook for about 15-20 minutes, or until the potatoes and cauliflower are tender.
  7. Add chopped tomatoes and salt. Mix well and cook for another 5 minutes.
  8. Garnish with fresh cilantro and serve hot with rice or roti.
