This delicious halibut dish is served with a flavorful roasted red pepper relish.
Ingredients
Salt and pepper - To taste
Fresh parsley - 2 tablespoons, chopped
Olive oil - 2 tablespoons
Lemon juice - 2 tablespoons
Garlic - 2 cloves, minced
Red onion - 1/2 cup, finely chopped
Red bell peppers - 2
Halibut fillets - 4 pieces
Instructions
Preheat the oven to 400°F.
Place the red bell peppers on a baking sheet and roast in the oven for 20 minutes, or until the skin is charred and blistered.
Remove the peppers from the oven and let them cool. Once cooled, peel off the skin, remove the seeds, and chop the peppers into small pieces.
In a bowl, combine the chopped red bell peppers, red onion, minced garlic, lemon juice, olive oil, chopped parsley, salt, and pepper. Mix well to combine.
Season the halibut fillets with salt and pepper.
Heat a grill or grill pan over medium-high heat. Cook the halibut fillets for 4-5 minutes per side, or until cooked through and flaky.
Serve the grilled halibut topped with the roasted red pepper relish.
