Servings: 4

Ingredients

  • Salt (to taste)
  • Black pepper (to taste)
  • Fresh parsley (1/4 cup, chopped)
  • Olive oil (2 tablespoons)
  • Lemon juice (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Red onion (1/2, finely chopped)
  • Red bell peppers (2, whole)
  • Halibut fillets (4 (6-ounce) pieces)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the whole red bell peppers on a baking sheet. Roast them in the oven for about 20 minutes, or until the skin is charred and blistered, turning occasionally to ensure even roasting.
  3. Once roasted, remove the peppers from the oven and let them cool for a few minutes. Once cooled, peel off the charred skin, remove the seeds, and chop the peppers into small pieces.
  4. In a mixing bowl, combine the chopped red bell peppers, finely chopped red onion, minced garlic, lemon juice, olive oil, chopped parsley, and season with salt and pepper. Mix well to combine. This relish can be made ahead of time and even stored in the fridge for a day to enhance the flavors.
  5. Season the halibut fillets with salt and pepper on both sides.
  6. Preheat a grill or grill pan over medium-high heat. Lightly brush the grill with olive oil to prevent sticking.
  7. Cook the halibut fillets for about 4-5 minutes on each side, or until they are cooked through and flake easily with a fork. Avoid overcooking to keep the fish moist.
  8. Serve the grilled halibut topped generously with the roasted red pepper relish. Enjoy this dish warm for the best flavor experience!
