This moist and flavorful carrot cake is a classic dessert that is perfect for any occasion.

Ingredients

  • Vanilla extract - 1 teaspoon
  • Powdered sugar - 2 cups
  • Unsalted butter - 1/2 cup, softened
  • Cream cheese - 8 ounces, softened
  • Vanilla extract - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cinnamon - 1 teaspoon
  • Baking soda - 1 teaspoon
  • Baking powder - 2 teaspoons
  • Eggs - 4
  • Vegetable oil - 1 cup
  • Granulated sugar - 1 1/2 cups
  • All - purpose flour - 2 cups
  • Carrots - 2 cups, grated

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the grated carrots, flour, sugar, vegetable oil, eggs, baking powder, baking soda, cinnamon, salt, and vanilla extract. Mix until well combined.
  3. Pour the batter into the prepared baking pan and spread it evenly.
  4. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  5. Remove the cake from the oven and let it cool completely.
  6. In a separate mixing bowl, beat the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  7. Spread the cream cheese frosting evenly over the cooled cake.
  8. Slice and serve the delicious gulerodskage (carrot cake). Enjoy!
