Carrot Cake

This moist and flavorful carrot cake is made with grated carrots, walnuts, and a cream cheese frosting.

Ingredients

  • Vanilla extract - 1 teaspoon
  • Powdered sugar - 2 cups
  • Unsalted butter - 1/2 cup, softened
  • Cream cheese - 8 ounces
  • Walnuts - 1 cup, chopped
  • Salt - 1/2 teaspoon
  • Cinnamon - 1 teaspoon
  • Baking soda - 1 teaspoon
  • Baking powder - 2 teaspoons
  • Eggs - 4
  • Vegetable oil - 1 cup
  • Granulated sugar - 1 1/2 cups
  • All - purpose flour - 2 cups
  • Carrots - 2 cups, grated

Instructions

  1. Preheat the oven to 350°F and grease a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the grated carrots, flour, sugar, vegetable oil, eggs, baking powder, baking soda, cinnamon, and salt. Mix until well combined.
  3. Fold in the chopped walnuts.
  4. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  5. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the cream cheese frosting. In a separate mixing bowl, beat the cream cheese and softened butter until smooth and creamy.
  7. Gradually add the powdered sugar and vanilla extract, and continue to beat until well combined.
  8. Once the cake has cooled, spread the cream cheese frosting evenly over the top.
  9. Slice and serve the carrot cake.
