This grilled ratatouille is a delicious and healthy dish made with grilled vegetables and a flavorful herb dressing.

Ingredients

  • Salt and pepper - To taste
  • Fresh thyme - 1 tablespoon, chopped
  • Fresh basil - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Balsamic vinegar - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Red onion - 1, sliced
  • Red bell pepper - 1, sliced
  • Yellow squash - 2 medium, sliced
  • Zucchini - 2 medium, sliced
  • Eggplant - 1 medium, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the sliced eggplant, zucchini, yellow squash, red bell pepper, and red onion.
  3. Drizzle the vegetables with olive oil and balsamic vinegar. Add minced garlic, chopped basil, and thyme. Season with salt and pepper. Toss to coat evenly.
  4. Place the vegetables on the preheated grill and cook for about 10-12 minutes, or until they are tender and slightly charred, turning occasionally.
  5. Remove the grilled vegetables from the grill and let them cool slightly.
  6. Serve the grilled ratatouille as a side dish or as a topping for grilled meats or crusty bread.
