Green Bean and Tomato Salad

This refreshing salad combines crisp green beans, juicy tomatoes, and a tangy vinaigrette.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Red wine vinegar - 1 tablespoon
  • Extra virgin olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Feta cheese - 1/4 cup, crumbled
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Green beans - 1 pound, trimmed

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until crisp-tender. Drain and rinse with cold water to stop the cooking process.
  2. In a large bowl, combine the green beans, cherry tomatoes, red onion, feta cheese, and fresh basil.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper.
  4. Pour the dressing over the salad and toss to coat evenly.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Serve chilled and enjoy!
