This refreshing green bean salad is packed with flavor from pine nuts, cherry tomatoes, and a tangy vinaigrette.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Pine nuts - 1/4 cup
  • Cherry tomatoes - 1 cup, halved
  • Green beans - 1 pound, trimmed

Instructions

  1. Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes, until crisp-tender. Drain and rinse with cold water to stop the cooking process.
  2. In a large bowl, combine the blanched green beans, cherry tomatoes, pine nuts, red onion, and fresh basil.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  4. Pour the vinaigrette over the salad and toss to coat evenly.
  5. Let the salad marinate in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
