Ingredients

  • Avocado - 1, sliced
  • Corn tortillas - 8
  • Gluten - free fajita seasoning - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Mushrooms - 8 oz, sliced
  • Yellow squash - 1, thinly sliced
  • Zucchini - 1, thinly sliced
  • Red onion - 1, thinly sliced
  • Bell peppers - 2, thinly sliced

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
