Gattafin, also known as 'Fried Ravioli', is a traditional dish from Liguria, Italy. It's a delicious appetizer made with a thin pasta dough filled with a mixture of herbs, cheese, and other ingredients, then fried until golden brown.

Ingredients

  • Vegetable oil - As needed
  • For frying -
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 1/2 cup
  • Garlic - 2 cloves
  • Fresh parsley - 1/2 cup
  • Fresh marjoram - 1/2 cup
  • For the filling -
  • Salt - 1/2 teaspoon
  • Eggs - 2
  • Flour - 2 cups
  • For the pasta dough -

Instructions

  1. To make the pasta dough, combine the flour, eggs, and salt in a large bowl. Knead until smooth and elastic, then cover and let rest for 30 minutes.
  2. To make the filling, finely chop the marjoram, parsley, and garlic. Combine with the Parmesan cheese, olive oil, salt, and pepper in a bowl.
  3. Roll out the pasta dough into a thin sheet. Cut out circles using a round cutter.
  4. Place a spoonful of the filling in the center of each circle. Fold the dough over to form a half-moon shape, then press the edges to seal.
  5. Heat the vegetable oil in a large frying pan. Fry the gattafin until golden brown, then drain on paper towels.
  6. Serve the gattafin warm.
