Garlic and Zucchini Polenta

This flavorful garlic and zucchini polenta is a delicious and comforting dish that can be served as a main course or a side dish.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Butter - 2 tablespoons
  • Parmesan cheese - 1/2 cup, grated
  • Zucchini - 2 medium, diced
  • Garlic - 4 cloves, minced
  • Water - 4 cups
  • Polenta - 1 cup

Instructions

  1. In a large saucepan, bring the water to a boil.
  2. Slowly whisk in the polenta and reduce the heat to low.
  3. Cook the polenta, stirring frequently, for about 20 minutes or until thickened.
  4. In a separate skillet, melt the butter over medium heat.
  5. Add the minced garlic and diced zucchini to the skillet and sauté until the zucchini is tender, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Once the polenta is thickened, remove from heat and stir in the grated Parmesan cheese.
  8. Add the sautéed garlic and zucchini mixture to the polenta and stir to combine.
  9. Serve the garlic and zucchini polenta hot, garnished with fresh chopped parsley.
