Flat Steak

This delicious flat iron steak is seasoned with a flavorful rub and served with a vibrant chimichurri sauce.

Ingredients

  • Black pepper (for chimichurri sauce) - 1/4 teaspoon
  • Salt (for chimichurri sauce) - 1/2 teaspoon
  • Olive oil (for chimichurri sauce) - 1/4 cup
  • Lemon juice - 1 tablespoon
  • Red wine vinegar - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 1/2 cup, chopped
  • Fresh parsley - 1/2 cup, chopped
  • Red pepper flakes - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Flat iron steak - 1.5 pounds

Instructions

  1. Preheat grill or grill pan to high heat.
  2. In a small bowl, combine salt, black pepper, garlic powder, paprika, cumin, and red pepper flakes to make the steak rub.
  3. Rub the steak with olive oil, then sprinkle the steak rub evenly on both sides of the steak.
  4. Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness.
  5. Remove the steak from the grill and let it rest for 5 minutes before slicing.
  6. While the steak is resting, prepare the chimichurri sauce by combining chopped parsley, chopped cilantro, minced garlic, red wine vinegar, lemon juice, olive oil, salt, and black pepper in a bowl.
  7. Slice the steak against the grain into thin strips.
  8. Serve the sliced steak with a generous drizzle of chimichurri sauce on top.
