Fig and Walnut Muffins

These delicious fig and walnut muffins are perfect for breakfast or as a snack. They are moist, flavorful, and packed with nutritious ingredients.

Ingredients

  • Walnuts - 1/2 cup, chopped
  • Dried figs - 1 cup, chopped
  • Vanilla extract - 1 teaspoon
  • Milk - 1 cup
  • Egg - 1
  • Granulated sugar - 1/2 cup
  • Unsalted butter - 1/2 cup, melted
  • Cinnamon - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, mix together the melted butter and sugar until well combined.
  4. Add the egg, milk, and vanilla extract to the butter mixture and mix well.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fold in the chopped figs and walnuts.
  7. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
