Apricot Crumble Muffins

Delicious muffins filled with juicy apricots and topped with a sweet crumble topping.

Ingredients

  • Oats - 1/4 cup
  • Cinnamon - 1/2 teaspoon
  • Brown sugar - 1/4 cup
  • Fresh apricots - 1 cup, diced
  • Vanilla extract - 1 teaspoon
  • Milk - 1 cup
  • Egg - 1
  • Granulated sugar - 3/4 cup
  • Unsalted butter - 1/2 cup, melted
  • Salt - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 2 cups

Instructions

  1. Preheat the oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, mix together the melted butter and granulated sugar until well combined.
  4. Add the egg, milk, and vanilla extract to the butter mixture and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Gently fold in the diced apricots.
  7. In a small bowl, combine the brown sugar, cinnamon, and oats to make the crumble topping.
  8. Spoon the muffin batter into the prepared muffin tin, filling each cup about 3/4 full.
  9. Sprinkle the crumble topping evenly over the muffins.
  10. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  11. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
