This delicious galette combines sweet figs and tangy goat cheese for a perfect balance of flavors.
Ingredients
Egg - 1, beaten (for egg wash)
Fresh thyme leaves - 1 tablespoon
Honey - 2 tablespoons
Goat cheese - 4 ounces, crumbled
Fresh figs - 8-10, sliced
Ice water - 3-4 tablespoons
Unsalted butter - 1/2 cup, cold and cubed
Salt - 1/4 teaspoon
Granulated sugar - 2 tablespoons
All - purpose flour - 1 1/4 cups
Instructions
In a large mixing bowl, combine the flour, sugar, and salt.
Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
Gradually add the ice water, 1 tablespoon at a time, and mix until the dough comes together. Be careful not to overmix.
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the oven to 375°F (190°C).
On a lightly floured surface, roll out the chilled dough into a circle about 12 inches in diameter.
Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
Arrange the sliced figs and crumbled goat cheese in the center of the dough, leaving a border of about 2 inches.
Drizzle the honey over the figs and goat cheese, and sprinkle with fresh thyme leaves.
Fold the edges of the dough over the filling, pleating as necessary.
Brush the edges of the dough with the beaten egg wash.
Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
Remove from the oven and let cool for a few minutes before serving.
