Fava Bean and Arugula Salad

This refreshing salad combines fava beans, arugula, cherry tomatoes, and a tangy lemon vinaigrette.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Extra virgin olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Arugula - 4 cups
  • Fava beans - 2 cups, shelled

Instructions

  1. Bring a pot of salted water to a boil. Add the fava beans and cook for 2 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skins of the fava beans.
  2. In a large salad bowl, combine the arugula, cherry tomatoes, red onion, and peeled fava beans.
  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  4. Drizzle the vinaigrette over the salad and toss to coat evenly.
  5. Serve the salad chilled and enjoy!
