This refreshing salad combines fava beans, arugula, cherry tomatoes, and a tangy lemon vinaigrette.
Ingredients
Salt and pepper - To taste
Honey - 1 teaspoon
Dijon mustard - 1 teaspoon
Extra virgin olive oil - 2 tablespoons
Lemon - 1, juiced
Red onion - 1/4 cup, thinly sliced
Cherry tomatoes - 1 cup, halved
Arugula - 4 cups
Fava beans - 2 cups, shelled
Instructions
Bring a pot of salted water to a boil. Add the fava beans and cook for 2 minutes. Drain and transfer to a bowl of ice water to cool. Peel off the outer skins of the fava beans.
In a large salad bowl, combine the arugula, cherry tomatoes, red onion, and peeled fava beans.
In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
Drizzle the vinaigrette over the salad and toss to coat evenly.
