Arugula and Grilled Shrimp Salad

This refreshing salad combines peppery arugula with succulent grilled shrimp, cherry tomatoes, and a tangy lemon vinaigrette.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Extra virgin olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Red onion - 1/4 cup, thinly sliced
  • Cherry tomatoes - 1 cup, halved
  • Grilled shrimp - 12 large, peeled and deveined
  • Arugula - 4 cups

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the shrimp with salt and pepper.
  3. Grill the shrimp for 2-3 minutes per side, until cooked through and slightly charred. Set aside.
  4. In a large bowl, combine the arugula, cherry tomatoes, and red onion.
  5. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  6. Drizzle the vinaigrette over the salad and toss to coat.
  7. Divide the salad onto plates and top with the grilled shrimp.
  8. Serve immediately and enjoy!
