Dan Dan Noodles is a classic Sichuan dish made with spicy ground pork, noodles, and a flavorful sauce.

Ingredients

  • Fresh noodles - 8 ounces
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2, chopped
  • Sesame paste - 2 tablespoons
  • Sugar - 1 teaspoon
  • Chinese black vinegar - 2 tablespoons
  • Chicken broth - 1 cup
  • Sichuan peppercorns - 1 teaspoon, crushed
  • Chili oil - 1 tablespoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ground pork - 1/2 pound

Instructions

  1. In a large skillet, cook the ground pork over medium heat until browned and cooked through. Drain any excess fat.
  2. In a small bowl, mix together soy sauce, sesame oil, garlic, ginger, chili oil, and crushed Sichuan peppercorns.
  3. Add the sauce mixture to the skillet with the cooked pork and stir well to combine. Cook for an additional 2 minutes.
  4. In a separate pot, cook the fresh noodles according to package instructions. Drain and set aside.
  5. In a small saucepan, heat the chicken broth, Chinese black vinegar, sugar, and sesame paste over low heat until warmed through.
  6. Divide the cooked noodles between two bowls. Pour the warm broth mixture over the noodles.
  7. Top the noodles with the pork mixture, chopped green onions, and fresh cilantro.
  8. Serve hot and enjoy!
